Higher in butterfat than sheep’s milk, the flavour is fresh with a mellow tang and a rich dense finish. Storage Recommendations – To prevent mold growth, keep oil level above cheese. If using fresh, Little Antoines can stay at room temperature for a few days. For longer storage keep submerged in the oil and store in a root cellar (to prevent oil hardening) or refrigerator for several months.
