Cru Hacienda Chocolate made of organic noble cacao from the Hacienda Elvesia, Dominican Republic.

The elegant, rich cacao flavour is entwined with tender tones of black tea and mild tobacco notes. The traditional, gentle processing method (72 hours conching) releases in this exceptional chocolate a fruity note, which is complimented by a hint of refreshing orange flavour and a pleasant grapefruit sharpness, leading to a long-lasting and festive finish.

Made with “noble-grade” Criollo, Trinitario and Wild Cocoa beans from selected farmers in Venezuela, Ecuador, Bolivia and Dominican Republic, paid above Fair trade prices, manufactured in Switzerland under the highest quality standards and perfected by Chocolatier Ludwig Ratzinger into a superior chocolate bar.

Ludwig was born in Germany/Bavaria, where he grew up in a bakery/pastry family owned business. After apprenticing in pastry in Garmisch – Partenkirchen Business school, and bakery in Landsberg he came to Canada in 1990. Here he worked at the Chateau Laurier from 1991 to 1999, and for the Governor General in 2000. He also ran a catering business and taught cooking and baking throughout the region.  Ludwig now lives and crafts his chocolate in his strawbale home, just outside of Maberly Ontario.
