Ompah

from $14.40

Raw Ewe’s Milk | Semi-Firm Washed Rind Cheese | Aged 3–5 Months

Named after the Algonquin word for “Long Step”, Ompah is inspired by the small village just north of Back Forty Artisan Cheese, located along the historic native portage route connecting the Madawaska and Mississippi River systems. The name also reflects the “long step” of frequent rind washings that encourages the growth of brevibacterium linens (b-linens) — the natural, desirable bacteria responsible for Ompah’s vibrant orange rind, distinctive aroma, and rich flavor.

Made with raw ewe’s milk, this semi-firm washed rind cheese offers a complex, savory flavor profile with a smooth, meaty interior balanced by the aromatic, pungent rind.

Wheel Dimensions: 6” diameter × 3.5” high, 2 kg wheels

Note: Every wheel is carefully crafted, cut, and packaged by hand. Wedge sizes may vary slightly — listed weights are approximate.

Tasting Notes & Pairings

Flavour: Rich, savory, and complex. Pungent orange rind balances the smooth, meaty interior, with a slightly tangy, umami finish.

Wine (recommended from our region):
Pairs well with full-bodied reds such as Cabernet Franc or Pinot Noir, or dry Rieslings from local wineries, which complement the intensity of the washed rind.

Craft Beer or Cider:
Try Belgian-style ales, amber ales, or dry ciders — the carbonation and maltiness balance the pungent, savory notes.

Craft Beverage (Non-Alcoholic):
Sparkling water with citrus, unsweetened iced tea, or fermented kombucha refresh the palate and highlight the cheese’s complex flavors.
