Pecorino Verona is a hard, Italian-inspired raw sheep milk cheese, naturally pressed and aged on pine for 9–15 months. The rind is frequently cleaned and brushed with extra virgin olive oil, a traditional process that protects the cheese from excessive moisture loss and allows it to maintain a subtle, approachable texture, making it ideal both for the table and for grating.

Named after the quaint town of Verona, located in Eastern Ontario’s cottage country between Kingston and Sharbot Lake, Pecorino Verona combines the sweet nuttiness of raw sheep milk with underlying earthy tones developed during its extended aging.

Storage Recommendations

  • Keep refrigerated.

  • Store in a loosely sealed container to protect the rind.

  • For best flavor, consume within a few months once cut.

Tasting Notes & Pairings

Flavour: Subtle, sweet, and nutty with underlying earthy complexity from the prolonged aging process. Hard, slightly granular texture, perfect for slicing or grating.
